Ingredients for 3 servings:

  • 250 g zucchini
  • 250 g tomatoes
  • 250 g onion(s)
  • 2 tbsp oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for a small snack or as a side dish

Halve the zucchini, remove the core, and slice the zucchini. Slice the onions and cut the tomatoes into eighths. Add the oil to a pan and cook the onions until translucent. Then add the zucchini slices and simmer over medium heat for about 8-15 minutes (depending on the thickness of the slices). Finally, add the tomatoes. Season with salt and pepper and let simmer for a little longer. This dish tastes best with a buttered sandwich, but it’s also a great side dish for lunch.
