Antipasti, super simple and delicious

Deseed the peppers and cut into not-too-thin strips. Heat a pan and add just a very small amount of oil for frying. Roast the pepper strips in the pan. They should blacken in places. Remove from the pan and let cool. Place the olive oil and peeled garlic cloves in a sealable container. Lightly press the garlic in first. Add a few herbs, if desired. Then add the roasted pepper strips. They should be covered with oil. Place everything in the refrigerator, sealed, and let it marinate for at least 24 hours. Shake occasionally. Another variation would be to press the unpeeled garlic cloves and fry them. Then add them to the olive oil to marinate. Also delicious as a side dish to grilled food.
