Wild garlic and lemon butter

Ingredients for 1 servings:

  • 250 g butter, soft (preferably Irish)
  • 1 bunch of wild garlic
  • 2 lemon(s), grated peel
  • Sugar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Grate the zest from both lemons and set aside. Wash the wild garlic leaves thoroughly, pat each one dry with kitchen paper, and chop finely. Mix the softened butter with the lemon zest and finely chopped wild garlic until smooth and season to taste with a pinch of sugar, salt, and pepper. Refrigerate for about an hour to allow the butter to solidify again. TIP: This fine wild garlic and lemon butter goes wonderfully with grilled dishes, but also with pan-fried poultry and fish. I would NOT heat the wild garlic and lemon butter in a pan, as the wild garlic will quickly become bitter otherwise. So only serve with fully cooked meat.
