Ingredients for 1 servings:

  • 50 g ham (salmon)
  • 30 g arugula
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 10 g cashew nuts
  • 1 pinch(s) of pepper
  • 15 g Parmesan

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with salmon ham and cashew nuts

Crush the unsalted cashews with a mortar and pestle and lightly toast them in a non-stick pan without any fat. Meanwhile, drizzle a shallow plate with balsamic vinegar and place the salmon ham on top. Spread the arugula on top and season with olive oil, pepper, and lemon juice. Sprinkle the toasted cashews on top. Cut the Parmesan cheese into wafer-thin slices and sprinkle them on top. Serve with ciabatta pieces topped with pesto rosso and basil leaves, Parmesan cheese, ham, etc.
