fresh summer salad

Wash or peel the apples, mango, and 1/2 avocado, cut into small pieces, and place them together in a bowl. Finely slice the green part of the washed spring onion and add it. Place the remaining ingredients, including the remaining avocado half, in a blender. This creates a creamy, fairly thick dressing. Pour this over the apple, mango, and avocado mixture and mix well. A sweet, sour, and spicy fresh salad. Perfect for summer temperatures and when you’ve picked too many apples from the garden.
