Ingredients for 4 servings:
- 500 g carrot(s)
- 50 g raisins
- 3 tbsp sesame seeds
- 4 tbsp olive oil
- 3 tbsp white wine vinegar
- 1 bunch of spring onions
- 50 g almonds or nuts
- 2 stalk(s) cinnamon
- ½ lemon(s), the juice
- 1 tsp sambal oelek
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Peel and coarsely grate the carrots. Toast the sesame seeds and cinnamon sticks in oil, then add the grated carrots and raisins. Sauté everything for about 2-3 minutes and season with salt, pepper, and sambal oelek. Deglaze with the white wine vinegar and let cool slightly. Finally, remove the cinnamon sticks. Finely slice the spring onions, roughly chop the almonds or nuts, and then mix them with the lemon juice into the carrots and let them marinate. Tip: This salad is easy to prepare and tastes even better when marinated.
