Ingredients for 2 servings:
- 3 spring onions
- 3 cloves garlic
- 2 tbsp olive oil
- 500 g minced beef
- 1 zucchini
- 2 small tomatoes
- 1 eggplant(s)
- 1 can of pizza tomatoes
- 1 mozzarella
- 150 g cream cheese
- salt and pepper
- Basil, fresh
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Low-carb
Finely slice the spring onions, finely grate or press the garlic. Heat olive oil in a pan and briefly sauté the onions and garlic, then add the minced meat and fry. Meanwhile, dice the vegetables and slice the mozzarella. Add the diced vegetables to the minced meat and fry briefly. Then add the pizza tomatoes and heat through. Now add the cream cheese and melt it, season with spices and herbs to taste. Finally, place the mozzarella slices on top of the vegetables and cover the pan for about 5 minutes so the cheese melts. Tip: I eat this dish in the evening, low-carb. But rice also tastes incredibly good with it.
