Apple pie made from yeast dough with a lattice

Mix the flour and dry yeast in a mixing bowl. Add the sugar and a pinch of salt. Heat the margarine and milk together in a saucepan and add to the dough. Using a hand mixer and dough hooks, mix until dough forms, or knead thoroughly by hand. Let it rise for one hour under a towel in a warm, draft-free place. After the resting time, knead the dough thoroughly again and let it rest for another 30 minutes. Grease the springform pan well with margarine or butter. Take about two-thirds of the dough. Line the bottom of the springform pan with it and pull up a rim. Make sure the bottom and rim are well connected. This will make it easier to open the springform pan later. Spread the applesauce evenly over the bottom. Then roll out the remaining dough and cut into strips using a knife or pastry wheel. Place the ‘lattice bars’ first lengthwise, then crosswise, on the applesauce and press firmly against the edges. At this point, preheat the oven to 180°C fan/convection oven. Brush the egg yolk onto the bars and the edge with a pastry brush. Sprinkle with sugar if desired. Bake the cake for 30 minutes. My tip: We think it tastes best when there are still chunks in the jam!
