Ingredients for 5 servings:

  • n. B. Cookie(s) (Christmas cookies, e.g. butter speculatius)
  • 1 small can of mandarin oranges
  • 150 g low-fat curd cheese
  • 100 g cream cheese
  • 200 g vanilla yogurt
  • 3 tbsp cornstarch or 1.5 tbsp locust bean gum

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Crumble the biscuits into medium-sized pieces in a freezer bag. Drain the mandarin oranges in a sieve, reserving the juice. Mix the quark, cream cheese, and yogurt together until creamy, adding the reserved juice from the mandarin oranges. Stir in cornstarch or locust bean gum, depending on the consistency of the cream. Place up to two tablespoons of biscuit crumbs into dessert glasses. Top with one or two large tablespoons of cream and embed the mandarins in the cream. Layer the biscuit crumbs, cream, and mandarins again. Continue until all glasses are filled. Refrigerate for about an hour. If desired, garnish with the reserved biscuit crumbs and mandarin orange segments just before serving. Enjoy chilled.
