Ingredients for 4 servings:
- ½ onion(s)
- 1 garlic clove(s)
- 2 tbsp olive oil
- 225 g long grain rice, parboiled
- 400 g tomato(s), chunky (pizza tomatoes)
- 2 tbsp instant chicken broth
- 1 tsp, leveled salt
- 2 pinches of pepper
- 1 tsp paprika powder
- 1 ½ cup(s) peas, frozen
- ½ red bell pepper(s)
- 3 tbsp mild ajvar
- 300 ml water
- 1 tbsp parsley, frozen
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 10 minutes
in a 2.4 l crockpot
Finely chop the onion, mince the garlic, and sauté both in oil in a pan or sauté pan. Add the rice and sauté until translucent. Add the bouillon powder and boiling water. Add the tomatoes and vegetables to the crockpot, then add the rice and bouillon. Add the spices and ajvar and stir well. Simmer on HIGH for 1 hour, then stir well and simmer on LOW for another 1 hour. Stir in the parsley before serving.
