Ingredients for 2 servings:
- 3 eggs
- 60 g grated cheese (e.g. Emmental)
- 30 g puffed amaranth
- salt and pepper
- Paprika powder
- Oil, optional

Working time approx. 2 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 7 minutes
very simple, quick to make
Whisk the eggs, stir in the amaranth and cheese. Season the mixture with salt, pepper, and paprika. Pour half of the mixture into each pan and let it set, then flip and finish cooking on the other side. This also works without oil in a nonstick pan. A fresh salad, such as a tomato salad, goes well with this.
