Vegetarian herb patties

Ingredients for 4 servings:

  • 2 slices of whole-grain toast
  • 5 eggs
  • 40 g wild garlic
  • 40 g dill
  • 40 g coriander leaves
  • 30 g walnuts
  • 5 tbsp rapeseed oil for frying
  • salt and pepper
  • 20 g grated cheese (e.g. Gouda)

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

quick, easy and delicious

Grind the toast in a blender until crumbly and add it to a large bowl along with the cheese. Chop the herbs and walnuts and add them to the bowl. Whisk the eggs and add them to the remaining ingredients. Season with salt and pepper and mix well. Let the mixture rest for about 10 minutes. Heat the rapeseed oil in a frying pan and add about a heaped tablespoon or 2 tablespoons of batter per patty (you’ll make about 8 patties). Fry until golden brown on both sides. Tips: The herbs can be varied depending on season and availability. We like to serve this with potato wedges and beans.
