Low-carb almond parmesan bread

Ingredients for 1 servings:

  • 120 g low-fat curd cheese
  • 80 g almonds, blanched and ground
  • 80 g Parmesan or Grana Padano
  • 4 m.-sized eggs
  • 1 tsp baking powder
  • 1 tsp seasoning mix, Italian or rosemary and oregano

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Preheat the oven to 180°C (top/bottom heat). Separate the eggs, beat the egg whites until stiff peaks form, and set aside. Whisk the almonds, Parmesan cheese, quark, egg yolks, baking powder, and spices until frothy and fold in the beaten egg whites. Grease a loaf pan or line it with baking paper. Pour the mixture into the loaf pan. Bake in the preheated oven on the middle rack for about 20 minutes. This bread goes very well with salad or soup. I love it with chili con carne.
