Vegan eggplant, date and walnut dip

Ingredients for 1 servings:

  • 1 eggplant(s)
  • 1 shallot(s)
  • 8 dates, dried
  • 1 handful of walnuts
  • 4 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cut the eggplant into small cubes and the shallot into thin rings. Dice the dates very finely. Roughly chop the walnuts. Sauté everything together in a pan. Cover and let it simmer in the hot pan and season with salt and pepper. Serve with: White bread, noodles, pancakes, as an oriental side dish with vegetables and red lentils, etc.
