Ingredients for 4 servings:

  • 300 g minced meat
  • ½ jar dried tomatoes
  • ½ jar olives, black
  • 3 slices of toast
  • 2 eggs
  • ½ cucumber(s)
  • 1 large beefsteak tomato(s)
  • 1 pack of mozzarella
  • ½ pack of arugula
  • 1 large ciabatta, or 4 ciabatta rolls
  • e.g. ketchup
  • e.g. cream cheese
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Meatballs with dried tomatoes and olives

Chop the sun-dried tomatoes, olives, and toast and mix with salt, pepper, eggs, and ground beef. If the mixture is still too soft, add more toast or breadcrumbs to even it out. Form into meatballs and fry. Meanwhile, cut the mozzarella and tomatoes into large slices and top each meatball with them just before the end of the cooking time, so they are lightly browned. Cut the ciabatta in half lengthwise and spread the underside with cream cheese and ketchup. Thinly slice the cucumber and top the bread with it. Layer the meatballs and washed arugula on top. Place the lid on top.
