Ingredients for 1 servings:
- 3 m.-sized eggs
- 20 g coconut flour
- 25 g protein powder, vanilla flavor, e.g. whey powder
- 15 g xylitol (sugar substitute) or Xucker or Xucker light
- 1 tbsp psyllium husks
- 100 ml milk
- 1 pinch of salt
- some butter or coconut oil for frying
- e.g. erythritol (powdered sugar substitute) for dusting,
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Separate 2 of the eggs and add the remaining egg to the egg yolks. Whisk the egg yolks with the coconut flour, whey powder, psyllium husk, salt, and sweetener. Then stir in the milk a little at a time until creamy and lump-free. Beat the egg whites until stiff peaks form. Then fold into the egg mixture. Don’t overbeat, so they don’t collapse and stay nice and fluffy. Heat a little butter in a non-stick pan. Pour the batter into the pan and let it set slightly over low to medium heat. Once the mixture has set well enough on the bottom and is a little firmer, divide it into quarters and turn it over. Even if the mixture is still quite soft on top and you can’t quite turn it all over, don’t worry, it will all work out fine. Let it set slightly on the other side as well. After a few minutes, break it up into large pieces. The pieces can be large or bite-sized, depending on your taste. Place on a plate and sprinkle with powdered sugar, if desired. Tip: If you’re preparing multiple servings, pour the batter into the pan in portions and keep it warm in the oven until everything is ready. Approx.
