Ingredients for 4 servings:

  • 500 g beetroot, cooked
  • 1 large apple
  • 1 onion(s)
  • 4 gherkins
  • 150 g sour cream
  • 150 g natural yogurt, 3.5% fat
  • 1 shot of agave syrup or sugar
  • e.g. salt and pepper
  • e.g. lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

vegetarian alternative

Mix the sour cream with the yogurt, season with salt and pepper. Add the juice from the beets—this gives them their beautiful pink color. Peel the apple, core it, and cut into small cubes. Peel the onion and finely dice it. Dice the beets and gherkins, too, and add everything to the sauce. Finally, season to taste with salt, pepper, agave syrup or sugar, and lemon juice. This goes perfectly with boiled or unboiled potatoes.
