Ingredients for 4 servings:
- 300 g asparagus, white
- 300 g asparagus, green
- 250 ml vegetable stock
- Salt and pepper, green, pickled
- 200 g cream cheese, natural
- 1 tsp mustard
- 4 small turkey schnitzels
- 2 tbsp oil
- pepper
- some chervil
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes
Peel the lower third of the green asparagus and the white asparagus whole. Heat vegetable broth with salt and peppercorns, and cook the asparagus for 10-15 minutes. Remove the asparagus from the broth and keep warm. Mix the broth with cream cheese and mustard, heat, and pour over the asparagus. Season the turkey schnitzel with salt and pepper. Heat oil in a pan and fry the schnitzel. Serve with the asparagus and the chervil.
