Ille's Berry Cake – Fruit Alarm

Ingredients for 1 servings:

  • 5 tbsp flour
  • 4 tbsp, levelled sugar
  • 3 eggs
  • 2 tbsp oil
  • 1 tbsp vinegar (fruit vinegar or wine vinegar)
  • 1 tsp baking powder
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 500 g strawberries or other sweet berries for pureeing
  • 500 g strawberries for topping
  • 1 pack of pudding powder, vanilla flavor
  • 1 pack of cake glaze
  • Sugar or sweetener
  • ¼ liter apple juice or water

Beat the eggs with sugar and vanilla sugar until frothy, then add the oil and vinegar. Sift the baking powder with the flour and stir into the frothy mixture. Pour into a greased 26cm springform pan and bake for 12-15 minutes in an oven preheated to 175°C until lightly browned. Purée 500g of berries and season with sugar or sweetener to taste. Briefly simmer the berry purée and mix with custard powder dissolved in 2 tablespoons of water. Bring to a very brief boil and immediately spread onto the slightly cooled base. On hot days, mix in a little gelatine. Place 500g of whole fruit onto the mixture, press down gently, and once slightly cooled, pour the cake glaze prepared according to the package instructions over it. The cake glaze tastes particularly good if you use half apple juice and half water instead of water. WW 2 P per piece for 12 cake slices and using sweetener instead of sugar.
