Ingredients for 1 servings:

  • 100 g spelt flour
  • 100 g flaxseed meal
  • 75 g almonds, ground
  • 3 tbsp oat flakes
  • 3 tbsp chia seeds
  • 5 g baking soda
  • 1 tsp, heaped salt
  • 5 m.-sized eggs
  • 250 g low-fat curd cheese
  • 1 shot of buttermilk
  • possibly pumpkin seeds or other seeds for sprinkling
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Preheat the oven to 200°C (top/bottom heat). Combine all dry ingredients and mix gently. Then add the wet ingredients and mix thoroughly until you have a smooth, moist dough. Depending on whether the dough is too dry or too moist, add a little more spelt flour or buttermilk. The dough shouldn’t be too dry. Pour the dough into a greased pan and bake for 45 minutes. If desired, you can sprinkle the dough with pumpkin seeds or other seeds or oatmeal before baking. If desired, check the bread’s doneness with a long toothpick. Then remove the bread and let it cool.
