Low carb bread with carrot without flour

Ingredients for 1 servings:

  • 380 g low-fat curd cheese
  • 5 eggs
  • 100 g oat bran
  • 100 g almonds, ground
  • 100 g hazelnuts, ground
  • 4 tbsp sunflower seeds
  • 4 tbsp flaxseed meal
  • 2 tbsp pumpkin seeds
  • 1 tsp, heaped salt
  • 1 packet of baking powder
  • 120 g carrot(s), grated
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes

Separate the eggs. Combine the egg yolks with the quark. Mix in all the dry ingredients. Grate the carrot and mix into the batter. Beat the egg whites until stiff peaks form and carefully fold in. Pour the batter into a greased loaf pan. Bake in a preheated oven at 180°C (top/bottom heat) for about 70 minutes on the middle rack. Test with a skewer until no more batter sticks to the skewer.
