Low-carb pizza pockets

Ingredients for 2 servings:

  • 56 g coconut flour
  • 1 tbsp psyllium husks
  • 1 tsp baking powder
  • ½ tsp salt and pepper
  • 6 tbsp olive oil
  • 1 egg(s)
  • 120 ml water, boiling
  • 1 egg(s) for brushing
  • possibly cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Low-carb

Preheat the oven to 200°C fan/convection oven. Combine all dry ingredients. Add the olive oil and egg and stir with a fork until a crumbly dough forms. Now add the boiling water. Continue stirring with a fork until a smooth dough forms. Roll out the dough between two layers of baking paper and cut out circles, e.g., using a cereal bowl. Fill as desired and fold over. Seal the edges neatly with a fork. Beat another egg and brush over the pockets. If you like, you can also top the pockets with grated cheese. Bake for approximately 20-25 minutes.
