Ingredients for 2 servings:
- 4 egg whites
- 1 pinch of salt
- 100 g grated cheese (Gouda, mozzarella, mix…)
- 2 tbsp whole wheat flour
- 3 tbsp oat flakes
- 1 tbsp sesame seeds if desired
- salt and pepper
- Spice(s) of your choice (paprika, garlic…)

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Utilization of protein
Preheat the oven to 180°C (top/bottom heat). Beat the egg whites with a pinch of salt until stiff peaks form. Grate any cheese (Gouda, mozzarella, Parmesan, Emmental, etc.). Using a spoon or spatula, carefully fold in the cheese, flour, and oat flakes (sesame or other seeds if available). Season with salt, pepper, and other spices to taste. Place small heaping spoonfuls onto a baking sheet. Try working quickly, as otherwise the egg whites will dissolve. Place the sheet in the hot oven for about 15-20 minutes, until the biscuits are lightly browned. Serve with any kind of salad. You can also use the biscuits as a “bread substitute” and make a low-carb sandwich out of them. If I have leftover egg whites from baking, I like to make these simple egg white biscuits for dinner.
