Lamb's lettuce with fried shiitake mushrooms and walnut oil

Ingredients for 2 servings:

  • 200 g lamb’s lettuce
  • 50 g mushrooms (shiitake)
  • ½ lemon(s)
  • 4 tbsp oil (walnut oil)
  • Oil for frying
  • salt and pepper

Instructions

Simple and delicious

It’s best to get the mushrooms fresh from the market (not dried). Wipe them with a cloth (do not wash them in water, as they will swell) and slice them. Heat a little oil in a pan and fry the mushrooms. Add the lemon juice and fry. This gives the mushrooms a delicate flavor. Once the mushrooms are lightly browned, let them cool. Trim the lamb’s lettuce and arrange on plates. Add the mushrooms and drizzle with 2-4 tablespoons of walnut oil, depending on your taste. Then just add a little salt and pepper. Tip: Unfortunately, the oil isn’t always available in regular supermarkets, but it can also be found at the market or in specialty stores.
