Lamb's lettuce with mushrooms and pine nuts

Ingredients for 4 servings:

  • 500 g lamb’s lettuce
  • 150 g mushrooms, fresh
  • 3 tbsp pine nuts
  • 4 tbsp olive oil
  • 2 tsp Aceto balsamico di Modena
  • salt and pepper
  • some butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and trim the lettuce thoroughly, then spin dry. Arrange on 4 plates. Brush the mushrooms clean and slice them. Heat a little butter and fry the mushrooms for a few minutes, seasoning with salt and pepper. Toast the pine nuts in a dry pan. Whisk the oil with the balsamic vinegar and season with salt and pepper. Just before serving, add the mushrooms and pine nuts to the lamb’s lettuce and drizzle with the dressing.
