Lamb's lettuce with avocado and pomegranate

Ingredients for 4 servings:

  • 1 bowl of lamb’s lettuce
  • 2 avocados
  • ½ pomegranate
  • 150 g goat’s cheese
  • 2 tbsp honey
  • 2 tbsp mustard
  • 1 tsp balsamic vinegar
  • Salt and pepper from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with goat cheese, honey and mustard dressing

Wash and trim the lamb’s lettuce, then trim the ends. Halve the avocado, peel and pit it, and dice the flesh with a knife. Remove the pomegranate seeds from the skin. For the dressing, combine the honey, mustard, and cream cheese in a bowl and mix well. Season with a dash of balsamic vinegar, salt, and pepper. Arrange the lamb’s lettuce, avocado, and pomegranate seeds on a plate. Then toss with the dressing.
