Halloumi salad

Ingredients for 2 servings:

  • 300 g leaf spinach
  • 1 bunch of mint
  • 1 mango(s)
  • 1 avocado(s)
  • 250g halloumi
  • 4 tbsp sunflower seeds
  • some olive oil
  • some vinegar
  • some lemon juice
  • some water
  • salt and pepper
  • Paprika powder
  • cumin

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with mango, avocado and mint

Wash the spinach leaves and mint, remove the stems, and mix in a bowl. Peel, pit, and dice the mango. Peel, pit, and dice the avocado. Fry the halloumi in a pan with a little oil until golden brown. Mix together the dressing by adding a little olive oil, vinegar, lemon juice, and water. Season to taste with salt, pepper, paprika, and cumin. Add the halloumi, avocado, and mango to the salad mix. Then add the dressing and sunflower seeds.
