Soak the cannelli beans in water and let them soak for at least 12 hours, preferably overnight. Rinse the beans with cold water. Bring a cup of water to a boil in a saucepan, add the quinoa, and let it stand for 10-15 minutes, or until the liquid is absorbed. Rinse and drain the quinoa. Roughly chop the onion and garlic and combine with the beans, quinoa, mustard, and seasoning. Place everything in a food processor and mix well until completely smooth. Knead the grated cheese into the mixture and form 2-3 burger patties from the mixture. These then need to be refrigerated for another 10-15 minutes. In the meantime, preheat the oven to 180°C (top/bottom heat). Heat the oil in a non-stick pan over medium-high heat and fry the patties on all sides until crispy. Top with sliced cheese. Place one patty on each sliced burger bun and bake in the oven for another 5 minutes, until the cheese is melted. Serve with ketchup or BBQ sauce. Other good options include tomatoes, a fried egg, caramelized onions, onion rings, and much more.
