Pepper-cucumber-skyr salad with spring onions

Ingredients for 2 servings:

  • 1 bell pepper(s)
  • ½ cucumber(s)
  • 1 spring onion(s)
  • 2 tbsp, heaped Skyr
  • 2 tbsp vinegar
  • 2 tbsp water
  • e.g. sugar or sweetener
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the bell pepper, halve, deseed, and dice. Wash and dice the cucumber. Wash the spring onion and slice into rings. Mix the dressing with skyr, vinegar, water, sugar or sweetener, salt, and pepper, and season to taste. Mix everything together and serve in bowls.
