Baked chicken breasts on red pepper

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 2 red bell peppers
  • 70 g cream cheese, tomato-chili-
  • 100g mozzarella
  • some salt and pepper
  • chili powder
  • Paprika powder
  • some cream
  • some butter for the mold
  • some clarified butter, for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Trim and season the chicken breasts, then sear them all over in hot clarified butter. Preheat oven to 180°C. Trim and wash the peppers, removing the white membranes, then cut them into large pieces and place them in a buttered casserole dish. Mix the cream cheese with a little cream until smooth and pour over the peppers. Place the seared breasts on top and cover with the thinly sliced ​​mozzarella. Bake in the oven at 180°C for 40-45 minutes. Cover with aluminum foil for the first 30 minutes to prevent the cheese from burning, or add the cheese later. Serve with fresh baguette.
