Mix the flour with the water until smooth and let stand for at least 10 minutes to swell. The coarser the flour, the longer the swell time. The consistency should not be watery, but also not mushy; in other words, it should still be runny enough to run off the breading – but it should be just thick enough that the breading no longer shows through after it runs off. Adjust if necessary with water or a little more flour. The spices can be dissolved in the flour mixture, but they can also be added to the breadcrumbs. The salt is best stored in the water, i.e. in the flour mixture. Press the breading down firmly; don’t let the food sit for long, as the salt absorbs water, which can lead to it separating. Fry in sufficient fat. Unfortunately, this isn’t possible to achieve a low-calorie result.
