Lamb's lettuce with mango

Ingredients for 4 servings:

  • 150 g lamb’s lettuce
  • 100 g mushrooms, fresh
  • 1 stalk(s) leek, large
  • 1 mango(s)
  • 2 tbsp orange juice
  • 4 tbsp white balsamic vinegar or grape balsamic vinegar
  • 6 tbsp olive oil, best quality
  • 1 shallot(s)
  • 1 clove(s) garlic, small
  • pine nuts

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and spin the lamb’s lettuce, trim and thinly slice the mushrooms, and finely slice the leek. Halve the mango, remove the pit, peel, and cut into approximately 1 cm cubes. Mix the salad ingredients in a bowl. For the marinade, combine the orange juice with the balsamic vinegar, season with salt and pepper, and whisk in the olive oil. Finely dice the shallots and garlic and add to the marinade. Toss the salad with the marinade and arrange on plates. Sprinkle with pine nuts and serve.
