Ingredients for 4 servings:
- 500 ml milk
- 1 stalk(s) cinnamon
- 1 lemon(s) – peel
- 4 eggs
- 100 g sugar
- 30 g starch flour
- ½ pineapple, fresh
- some sugar

Pineapple Delight
Bring the milk to a boil with the cinnamon stick and lemon zest. Remove the flavorings from the milk. Beat the egg yolks with the sugar until pale yellow. Dissolve the cornstarch in a little milk and add it to the egg mixture. Add the remaining milk and bring back to a boil until the mixture thickens. Hollow out the pineapple half, taking care not to damage the skin. Cut the flesh into small pieces and add it to the pudding mixture. Fold the beaten egg whites into the mixture. Transfer everything to the pineapple bowl and let it cool. Sprinkle with a little sugar and briefly place under a hot grill until the sugar is caramelized.
