Ingredients for 10 servings:
- 1 ½ kg strawberries
- 250 g mascarpone
- 1 kg quark, 40%
- 500 ml whipped cream
- 100 g sugar
- 4 bags of vanilla sugar
- 200 g meringue(s), white
- 100 g meringue(s) – crowns, white and pink
- 200 g chocolate (yogurt chocolate)
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Wash and quarter the strawberries, reserving 8 nice whole berries for garnishing. Toss the chopped strawberries with two tablespoons of sugar to release their juice. Meanwhile, whip the cream with two sachets of vanilla sugar until stiff peaks form. Then whisk the quark with the mascarpone, the remaining sugar, and the remaining vanilla sugar until smooth. If the mixture is too stiff, add a little water. Finely chop the chocolate (preferably Yogurette) and fold in. Place the white meringue in a bag and roll it over with a paper towel, breaking the meringue into small pieces. Don’t press too hard, or it shouldn’t become sugar dust. In a large glass bowl, alternate layers of strawberries, quark cream, and meringue crumbs. Finally, add the cream on top. Now decorate the strawberry dream with meringue crowns and strawberries. Serve the same day, or the strawberries will release too much juice and the mixture will be too runny!
