Sugar and fat-free banana bread

Ingredients for 1 servings:

  • 100 g spelt flour
  • 50 g ground oat flakes
  • 50 g protein powder, e.g. chocolate flavor
  • 50 g nuts, e.g. hazelnuts, almonds, desiccated coconut and walnuts
  • 2 eggs
  • 3 bananas, approx. 300 g
  • 100 g applesauce or one grated apple
  • 1 packet of baking powder
  • n. B. spice(s), e.g. vanilla or cinnamon powder

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Whisk the eggs, mashed bananas, and applesauce until frothy. Then stir in the ground nuts, protein powder, ground oats, and flour mixed with baking powder. Finally, fold in the spices, such as cinnamon powder and vanilla. If desired, you can add more sweeteners or even fold in chocolate drops. Shape the dough into a loaf and place it on a baking sheet lined with parchment paper or pour it into a baking dish. Bake in an oven preheated to 160°C (convection oven) for about 35 minutes on the middle rack. I keep the bread in the refrigerator for a week. The bread has about 1,500 calories, which is around 94 kcal per slice if you cut it into 16 slices. I like to eat it with quark and banana on top, but you can also eat it on its own!
