Ingredients for 1 servings:

  • 6 large eggs
  • 3 small tomatoes
  • 1 slice(s) of cooked ham
  • 1 m.-sized onion(s)
  • ½ bell pepper(s), red
  • 100 g grated cheese, e.g. Gouda
  • salt and pepper
  • Paprika powder
  • oregano
  • Herbs of Provence

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

quick and easy, for 12 muffins

Peel and finely chop the onion, as well as the cooked ham. Wash, trim, and halve the bell pepper, then finely chop one half. Wash the tomatoes, remove the green stems and the soft inside, and finely chop the fleshy skin. Place the onion, bell pepper, and tomato pieces in a bowl with the diced ham and grated cheese. Add salt, pepper, and herbs, and mix well. Fill the mixture about halfway into the 12 muffin cups in a muffin tin. Crack the eggs, whisk them with salt, pepper, and paprika, and pour over the mixture in the cups. Bake in the oven at 180°C for 15 minutes. Serve with a green salad and garlic or herb baguette.
