Ingredients for 6 servings:
- 500g fusilli
- 125 g bacon, diced
- 1 leek(s)
- 1 m.-sized onion(s)
- 7 eggs
- a few stalks of chives
- oil
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Cook the pasta in salted water until al dente. Meanwhile, dice the onion and halve the leek lengthwise and slice it. Wash the leek in a sieve and drain well. Chop the chives. Beat the eggs in a mixing bowl with a whisk and season with salt and a little pepper. Don’t use too much salt, as the bacon is already salty. Heat a little oil in a pan and fry the leek, onion, and bacon. When the onions are translucent, pour the beaten eggs over them and let them thicken, scraping them up from the bottom of the pan with a spatula. When everything is firm but still slightly shiny, add the drained pasta to the pan and stir. Season everything again with salt and pepper and add the finely chopped chives.
