Spinach and ham omelette

Ingredients for 4 servings:

  • 300 g spinach, cooked and finely chopped
  • 6 eggs
  • 250 ml milk
  • 40 g breadcrumbs
  • 3 spring onions, cut into fine rings
  • 130 g cooked ham, finely diced
  • 1 tbsp parsley, finely chopped
  • 190 g Cheddar cheese, grated
  • salt and pepper
  • 1 tbsp butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Grease a 22 x 22 cm baking pan with butter. Preheat oven to 180°C. Whisk all ingredients together thoroughly and season with salt and pepper. Pour into the baking pan and bake for 30 minutes, until the mixture is firm. Remove from the oven. Carefully turn out of the pan and cut into equal-sized pieces. Serve warm or at room temperature.
