super enjoyment of lamb

Remove the leg of lamb from the bones and trim any tendons or fat. Place the garlic cloves, whole but peeled, into the slits (carver’s pockets). Add more if needed. Season the meat with salt and pepper. Make a spread from the mustard and honey and mix in the lemon juice. Spread the mixture all over the meat and place in aluminum foil. Wrap the foil around the meat several times to ensure the meat is well wrapped. Place the whole thing on a grill and heat it up with good quality wood. Keep adding more wood, as the meat will need to stay on the grill for about three hours. After that, you can take the meat off the grill and divide it among the people. You can add whatever side dishes you like, but they are not necessary. This is something special for summer celebrations.
