Ingredients for 6 servings:
- 1 ½ kg potatoes
- 75 g bacon
- 75 g bacon
- 2 tbsp oil
- 1 onion(s)
- 125 ml vegetable stock
- 6 tbsp vinegar
- salt and pepper
- 2 tsp mustard
- 2 tbsp chives, fresh, chopped
- 2 tbsp fresh parsley, chopped
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Wash the potatoes and cook in boiling water for about 25 minutes. Drain, let cool slightly, then peel. Dice the onion, bacon, and bacon and sauté in the bacon fat until translucent. Deglaze with the broth. Slowly stir in the oil, vinegar, mustard, pepper, and a little salt. Slice the potatoes and place them in a bowl, pour the warm marinade over them, and mix well. Serve warm with the herbs.
