Ingredients for 4 servings:
- 600 g jacket potatoes, mainly waxy
- 1 onion(s)
- 120 g bacon or smoked meat, diced
- 3 tsp mustard
- 250 ml vegetable stock
- Vinegar (wine vinegar)
- Salt
- pepper

without mayonnaise
Boil the potatoes in their jacket potatoes for about 20 to 25 minutes. Peel while warm, then let cool and then dice or slice while cold. For the dressing, peel and dice the onion. Fry in a pan with the bacon – it can be a little crispy if desired. Deglaze with the stock, then stir in the mustard and a dash or two of vinegar. Season with salt and pepper. Simmer for a short time. Then pour the dressing over the potatoes while still warm and stir. The potatoes can float a little. Let everything sit for a while, ideally one to several hours. The sauce will absorb it over time.
