Ingredients for 4 servings:
- 175 g brown rice
- 1 lemon(s), grated peel and juice
- Salt, to taste
- 2 tbsp oil
- 2 tbsp parsley, chopped
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Cover the rice with water in a pot, add the lemon juice and zest, and bring to a boil. Cover tightly and simmer over very low heat for 30-35 minutes, until the rice is tender. Remove from the heat and let stand for 5 minutes. Stir in the salt, olive oil, and parsley. Fluff with a fork before serving. A simple and unusual way to cook rice. The finished rice looks appetizing and makes a refreshing side dish.
