Ingredients for 3 servings:

  • 6 pretzels from the previous day
  • 100 g onion(s), finely diced
  • 200 ml milk
  • 3 eggs
  • 1 bunch parsley, chopped
  • 50 g butter
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cut the pretzels into small cubes. Heat the milk and pour it over the pretzels. Stir in the eggs and parsley, and season with salt, pepper, and nutmeg. Sauté the onions in the butter and add them to the dumpling dough. Let everything simmer for about 20-30 minutes. Stir briefly halfway through. Then form 6 to 7 dumplings and simmer in boiling salted water for about 25 minutes. Remove the dumplings from the water and serve hot. Variation: Instead of dumplings, form a sausage from the dough and simmer in boiling salted water until tender. Then slice and serve hot. Once cold, the dumplings can be sliced ​​the next day, fried in butter until golden brown, and served with any roast.
