Quick carrot and potato stew with the Thermomix

Ingredients for 4 servings:

  • 6 m.-sized potatoes, mainly waxy, cut into pieces
  • 3 m.-sized carrot(s), sliced
  • 1 onion(s), halved
  • ¾ liter vegetable broth
  • salt and pepper
  • 1 bay leaf
  • 50 g bacon, cut into pieces

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Chop the onion for 5 seconds on speed 5. Sauté with a little oil and the bacon for 2 minutes on speed 1. Sauté the potatoes and carrots for 1 minute. Add the stock and cook for another 25 minutes on speed 1 at 100°C. If you like, blend for 3 seconds on speed 4.
