Ingredients for 1 servings:
- 200 g flour
- 50 g almonds, ground
- 50 g oat flakes, fine
- 60 g erythritol (sugar substitute)
- 10 g vanilla sugar
- 20 g raw cane sugar
- 1 pinch of salt
- 1 lemon(s), zest
- 1 package of cream of tartar baking powder
- 100 ml oil, neutral
- 100 ml oat milk (oat drink)
- 150 ml water
- 1 tsp lemon juice
- 3 apples
- 1 handful of walnuts, roughly chopped
- 1 pinch(s) cinnamon powder
- Fat for the mold
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes
Mix the dry ingredients (flour, ground almonds, oats, erythritol, vanilla sugar, raw cane sugar, salt, lemon zest, cream of tartar) well in a large bowl. Mix the wet ingredients (oil, oat milk, water, lemon juice) in a separate bowl. Peel, quarter, and core the apples, and cut strips along the top (but do not cut all the way through). Roughly chop the walnuts and set aside. Preheat the oven to 180°C (top and bottom heat). Line a round springform pan with baking paper and grease. Carefully fold the wet ingredients into the dry ingredients, mixing until just combined. Pour the batter into the prepared springform pan. Lightly press the prepared apple quarters into the batter. Distribute the chopped walnuts between the apples. Sprinkle a pinch of cinnamon over the cake. Bake the cake in the hot oven on the middle rack for about 50-60 minutes, until golden brown and a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool in the pan. Then remove the springform pan and let it cool completely on a wire rack.
