Pancakes with bananas and chia seeds

Ingredients for 1 servings:

  • 3 tbsp chia seeds
  • 300 ml milk
  • 2 bananas
  • 180 g flour
  • 50 g sugar
  • 1 tbsp baking powder
  • 1 pinch of salt
  • 1 tsp cinnamon powder
  • e.g. vanilla powder
  • some margarine or butter

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

First, mix the chia seeds with 250 ml of milk and let it sit in the refrigerator for about 20 minutes. In the meantime, mash the bananas and mix the flour with the sugar, baking powder, salt, cinnamon, and vanilla. The sugar can be omitted, as the bananas are already sweet. Once the seeds have settled, mix all the ingredients together and add another 50 ml of milk for a smoother consistency. Melt a little margarine or butter in a pan and fry the batter into pancakes. Cook the pancakes thoroughly, but be careful, as they will brown quickly. The inside will remain a bit sticky, thanks to the bananas.
