Ingredients for 4 servings:

  • 6 plums
  • 2 orange(s), the juice
  • 3 tbsp sugar
  • 1 packet of vanilla sugar
  • 1 tsp cinnamon

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Plum roast with Kaiserschmarrn, vanilla ice cream or as a sauce for dessert

Pit four of the plums and chop them into large pieces. Place the sugar in a saucepan and caramelize over medium heat until golden yellow. Pour the caramel over the orange juice, add the plums and vanilla sugar, and simmer over low heat until the caramel has completely dissolved, at least 10 minutes. Finely puree the plums with a hand blender, strain the mixture through a sieve if necessary, and return it to the saucepan. Stone the remaining two plums and chop them into fine pieces. Add the cinnamon and plum pieces to the puree and bring to a boil briefly. Season to taste with additional spices or alcohol, if desired. The sauce can be served lukewarm or cold with all kinds of desserts and sweet dishes, e.g., Kaiserschmarrn (sweet pancakes), pancakes, or vanilla ice cream. It also makes a good sauce without the plum pieces.
