Ingredients for 4 servings:

  • 200 g dark chocolate (over 70% cocoa content)
  • 3 eggs
  • 200 ml cream
  • 40 g sugar
  • 50 g butter

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Separate the eggs and beat the egg whites and cream separately until stiff peaks form. Carefully melt the butter and chocolate in a double boiler. Beat the egg yolks in a large bowl with 2 tablespoons of hot water until light and creamy. Stir in the sugar until the mixture is light and creamy. Fold in the melted chocolate, then immediately fold in the beaten egg whites and cream (do not use an electric mixer!). Chill in the refrigerator for at least 2 hours. Serve well, but do not overcook it. Garnish with chocolate sprinkles, if desired.
