Ingredients for 1 servings:

  • 200 g wheat flour
  • 75 g flour (wholemeal)
  • 50 g spelt flour
  • 50 g oat flakes
  • 50 g flakes (soy flakes)
  • ½ tsp dry yeast
  • 1 tbsp cane sugar
  • ½ tsp salt
  • 350 ml water
  • 1 tsp pumpkin seeds
  • 1 tsp sesame seeds
  • 1 tsp flaxseed

Instructions

Working time approx. 10 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 15 minutes

Mix flour, flakes, and yeast in a bowl. Add sugar, salt, and water. Using a hand mixer fitted with a dough hook, mix everything together for 10 minutes until you have an elastic dough. Add a little water if necessary. Dust the dough with a little flour, cover, and let it rise for 40 minutes. Shape the dough into 8 balls and let it rest for 5 minutes. Shape the balls into bagels and place them on a baking sheet. Sprinkle with kernels and seeds, press down lightly, and bake at 220°C (top/bottom heat) or 200°C (fan oven) for about 20-25 minutes. Enjoy lukewarm with fresh butter.
