Broccoli – zucchini – salad

Ingredients for 1 servings:

  • 300 g broccoli
  • 1 spring onion(s)
  • 1 small zucchini
  • 1 tsp capers
  • 1 tbsp olive oil
  • 1 dashes lemon juice
  • 2 tbsp Balsamic vinegar, dark or light
  • salt and pepper

Working time approx. 10 minutes; Total time approx. 10 minutes

Trim and wash the broccoli and divide it into florets. Cook in boiling salted water for about 5 minutes. During this time, slice or grate the zucchini into very fine strips. Slice the spring onion into thin rings. Mix the dressing ingredients. Arrange the vegetables and capers on a plate and pour the salad dressing over them. Tip: Sprinkle the crumbled feta cheese over the salad.
